After patiently waiting one year, I finally decided it was time to sample a bottle of ‘my own creation’ of California Trinity Red wine, which would pair perfectly with our dinner. Upon pulling the cork out of the bottle, a wonderful aroma wafted from the opened wine bottle past my nose…ahhhh! I poured the wine through an aerator into a crystal wine glass and proceeded to swirl the wine around in the glass…the color of the wine was that of deep-red Bing cherries…luscious. There were a few bubbles remaining, but they disappeared after several more swirls about in the glass. Then, finally, I took a sip…this California Trinity Red wine was very tasty, indeed, but could be better if left to age a few more months, down in “Sofia’s Cellar”.
So, now, I decided to put the opened California Trinity Red wine bottle into the refrigerator WITHOUT re-corking it…and to taste it again the next day; perhaps more aeration would improve the wine.
Let me just say, that now I truly believe that a “wine-connoisseur” composed the following song: “WHAT A DIFFERENCE A DAY MAKES, TWENTY FOUR LITTLE HOURS!”…because…the following evening, once again I poured a glass of California Trinity Red through an aerator into a lovely crystal wine glass, swirled the wine in the glass about…not a bubble in sight…took a sip…OH, MY GOODNESS!…I could not believe it was the same wine…what a wonderful velvety wine, with so much more intense plum and red berry flavors…simply divine!
So, if your next glass of wine does not quite meet your expectations, place the opened bottle of wine UNCORKED into the refrigerator for 24 hours, and you, too, may be pleasantly delighted with a wonderful glass of wine, while humming: “What a difference a day makes, twenty four little hours”!
